Scones for Afternoon Tea

Fresh baked scones are a pure delight.

Ingredients

Plain flour 225g
Baking powder 2-3 tsp
Salt 1/2 tsp
Caster sugar 30g
Butter 55g
Milk 150ml
Egg yolk or milk to brush a little

Method

Preheat the oven 200-210C (Gas mark 6-7).

Sift the flour, baking powder, salt and sugar into a large bowl. Add the cold butter (small dice).

Rub together to get a breadcrumb texture.

Add the milk a bit at a time and mix well until it becomes a dough.

Dust a chopping board and roll out the dough to 1-2cm thick.

Cut out as many 6cm diameter rounds with a pastry cutter as will fit - roll together any trimmed pastry to create more scones.

Put onto a lightly oiled baking tray.

Brush with egg yolk or milk and put in the oven for 12-15 minutes until risen and golden.

remove from the oven and serve with clotted cream and strawberry jam while still warm.

Traditionally, slice in half across and fill with the jam and cream (or cream and jam).

Tips & Note

●Don't overmix at Step 4 as this will develop the gluten and make the scones hard and dense.
