Yorkshire Pudding with Sardines

Ingredients

Sardine 1
Yorkshire puddings 4
A
Cherry tomatoes 4
Garlic 1/2 clove
Onion (small) 1/2
Courgette 5cm
Sundried tomatoes 2
Capers 2 tsp
Balsamic vinegar 1 tsp
Basil leaves 4
Breadcrumbs as required
Parmigiano Reggiano as required
Olive oil as required
Salt & pepper as required

Method

Open up the whole sardines and season with salt & pepper.

Finely chop all the ingredients A, then fry in oil in a frying pan.

Add the capers and balsamic vinegar and season with salt & pepper. Add the chopped basil leaves and mix lightly.

Stuff Step 3 into the Yorkshire puddings. Put 1/4 sardine onto each.

Sprinkle Step 4 with the breadcrumbs and Parmigiano Reggiano. Drizzle with olive oil.

Bake in the oven 200C for 13 minutes. Remove when golden brown.
