Chicken Simmered in Soy, Sake & Balsamic Vinegar

The chicken will absorb the lovely flavours and be tender, moist, juicy and delicious!

Ingredients

Leeks 2
Turnip 1
Ginger juice 1 thumb
For marinating:
Chicken pieces (drumsticks, wings or thighs) 8-10
Vegetable oil 2-3 tbsp
Balsamic vinegar 1-2 tbsp
Sake 1/2 cup
Soy sauce 1 tbsp
Onion (finely chopped) 1
Garlic (finely chopped) 1 clove

Method

Put all the marinating ingredients together into a large bowl for 2-3 hours.

Remove the chicken from Step 1 and pat dry thoroughly. Keep the marinating liquid.

Fry the chicken in a frying pan skin side first until nicely browned all over. Remove to a large pan.

In the same frying pan, add the sake and bring to the boil, incorporating off all the browned scrapings.

Add the sake liquid from Step 4 into the pan with the chicken at Step 3. Pour in the marinade from Step 2.

Turn the heat on and bring the pan to the boil. Turn down to low heat and simmer for 20-30 minutes.

Boil the leeks and turnip until just cooked then cut the leeks to 4cm pieces and the turnip into 6 pieces. Fry in a frying pan until lightly browned.

Add the vegetables from Step 7 into the pan at Step 6 five minutes before it's ready. Transfer to a serving dish and drizzle with the ginger juice before serving.

Tips & Note

At Step 3, if there is any marinade still on the chicken when you fry it, it might splash so pat dry well.
