Cod & Prawn Oriental Fishcakes

Goes really well with a nice cold drink!

Ingredients

Cod fillets 2
Prawns 5-6
Onion 1
Dried shiitake mushrooms 1-2
Garlic 1 clove
Ginger 1 thumb
Egg white 1
Coriander (optional) as required
Salt & pepper 2 tbsp
Vegetable oil 2 tbsp
[Dipping Sauce]
Fish sauce (nam pla) 2-3 tbsp
Sugar 1 tbsp
Crushed chilli 1-2 tsp
Vinegar or lemon or lime juice 2-3 tbsp
Garlic (grated) 1 clove
Cucumber, carrot, celery (finely diced) 2 tbsp

Method

Remove the skin and bones from the cod and cut into small dice. Remove the shells from the prawns and the black vein, then roughly chop.

Rehydrate the shiitake mushroom and chop. Finely chop the onions and fry until softened.

Mix all the dipping sauce ingredients together in a bowl.

Put the cod into a blender and mix until smooth.

Add the garlic, ginger, egg white and coriander and blend again.

Add the prawns, softened onion and mushroom into Step 5 and blend again. Season with salt & pepper.

Put a bit of oil on your palms and take a small handful of the mix and flatten into fishcakes.

Heat up the oil in a frying pan and fry the fishcakes 2-3 minutes each side until nice and golden.

Remove to a plate on kitchen paper to drain off excess oil.

Transfer to a serving dish alongside the dipping sauce.

Tips & Note

●You can use the back of a knife to chop down the cod.
