Prawn & Broad Beans in Fried Rice with a Snow White Sauce

The gorgeous snow white sauce is full of flavour to complement the prawns.

Ingredients

King prawns 12-16
Broad beans (frozen) 1/2 cup
Spring onions 2
Cooked rice 3 bowls
Eggs 4
Salt & pepper as required
Soy sauce 1 tbsp
Vegetable oil 3 tbsp
Gravy:
Chicken stock 300ml
Salt & pepper 1 tbsp
Potato starch or cornflour 1 tbsp

Method

Out of the 4 eggs, separate the yolk and white from 2. The other 2 eggs, crack and beat with some salt.

Remove the black veins from the prawns and soak in sake or white wine.

Boil the chicken stock in a pan and add salt & pepper and soy sauce. Mix the potato starch with the same amount of water and pour into the chicken stock to thicken into a gravy.

Boil the gravy gently and add the two egg whites and stir well to create a snow white sauce.

Put 2 tbsp oil in a frying pan and add the two beaten eggs to make half cooked scrambled egg. Remove and transfer to a plate.

Clean the frying pan and add the remaining oil and heat. Fry the prawns until nicely coloured.

Add the broad beans (boiled for 1 minute), cooked rice and the scrambled eggs from Step 5 and mix well.

Turn the heat off and add the finely chopped spring onions, Transfer to a serving dish and cover with the snow white sauce before serving.

Tips & Note

●This applies for mostly all egg recipes - take out of the fridge and allow to reach room temperature
