Sumptuous Chicken, Tomato & Aubergine Curry

A lovely curry without a sauce but with mango chutney to give it sweetness.

Ingredients

Chicken thighs 4-5
Aubergine 1/2-1
Tomato 1
Onion 1/2
Garlic 2 cloves
Ginger 2 thumbs
Your favourite curry powder 2 tbsp
Tomato puree 1 tbsp
Mango chutney 1-2 tbsp
Salt as required
Vegetable oil as required

Method

Put some oil in a frying pan and fry the bitesize pieces of aubergine to brown then remove to a plate.

In the same pan, add the skinned and boned chicken cut to bitesize pieces. Fry to cook through then remove to a plate.

In the same pan, add the finely chopped onion, ginger and garlic and lightly fry on high heat.

Add the curry powder and stir fry for 1 minute (add some more oil if necessary).

Add the tomato puree and stir fry for a few minutes.

Return the aubergine and chicken from Steps 1 & 2, add the chopped tomato and fry together to incorporate.

Turn the heat down to medium and add enough water to half cover the ingredients. Bring to the boil.

Put the lid on and simmer for 4-5 minutes.

Remove the lid and reduce the sauce almost completely. Add the mango chutney and mix in. Season with salt to taste before serving.

Tips & Note

Adding the mango chutney at the end gives sweetness and depth of flavour to this curry. The sauce is reduced enough to give flavour, so serve with some cooked rice or naan bread and with yogurt or lemon wedges.
