Soybean Flour & Mixed Spice Cookies

Ingredients

Butter 100g
Brown sugar 80g
Egg 1/2
Plain flour 150g
Soybean flour 30g
Mixed spice 2 tsp

Method

Put the room temperature butter in a bowl and mix with a spatula until light and creamy.

Add the brown sugar in 3 separate lots and mix. Add the egg in 2 separate lots and mix.

Sift in the flours and mixed spice. Mix with a wooden spoon in a folding motion.

When a dough forms, wrap in cling film and keep in the fridge for 30 minutes.

Put the dough onto a floured board and roll out to 5mm thick. Cut out using any cookie cutter shape.

Place on a lined oven tray and bake in a preheated oven at 180C for 15 minutes.

Tips & Note

I used mixed spice for baking as it contains cinammon. Once the flour is added, don't overmix or the dough will be too solid.
