Strawberry Eton mess

Simple but a really fashionable dessert.

Ingredients

Strawberries 400g
Caster sugar 3 tbsp
Double cream 300ml
Meringue 4

Method

Dice the strawberries, leaving a few for the garnish.

Add the caster sugar to the double cream and whip.

Break the meringue into pieces and mix with Step 2. Place into dessert glasses, alternating the strawberries and the meringues in cream.

Tips & Note

●a meringue is originally whipped egg whites: both the cooked and uncooked sorts are called meringue.
● You can get the baked ones in Waitrose (8 pieces for £1.50) and M&S called 「Meringue Nests」.
