Spaghetti with Chicken and Pine Nuts

Ingredients

Pine nuts 100g
Bacon lardons 200g
Chicken breast 300g
Red onion 1
Cherry tomatoes 10
Spinach 1 pack (260g)
Garlic 1 clove
Balsamic vinegar 2 tbsp
Nutmeg 1 tsp
Salt & pepper a little

Method

Dry roast the pine nuts and keep aside. Boil the spaghetti.

Finely chop the garlic and onion, cut the chicken into bitesize dice. Cut the tomato in quarters.

Put the oil in a frying pan and add the garlic, onion and bacon.

When the onion is soft, add the chicken.

When the chicken is cooked, add the tomatoes and spinach and put the lid on for a few minutes.

When the spinach is reduced, add the balsamic vinegar, nutmeg, salt & pepper and pine nuts.

Pour onto the cooked spaghetti.

Tips & Note

It's so quick once the chicken is cooked, just throw everything else in and enjoy!
