Hot & Sweet Minced Pork & Pea Fried Rice

You only need 3 ingredients to add to the rice: pork, egg and peas - so simple but so tasty.

Ingredients

Cooked rice for 2 people
Minced pork 150g
Eggs 2
Salt a little
Soy sauce 3-4 tbsp
Sugar 3-4 tbsp
Chicken stock granules 1 tbsp
White wine 2 tbsp
Mirin 1 tbsp
Salt & pepper a little
Green peas 150g

Method

Beat one egg and add a pinch of salt. Put the vegetable oil in a frying pan and make a light scrambled egg. Remove to a plate.

In the same pan, add the minced pork and fry. Add the soy sauce and sugar and fry for 4-5 minutes on medium heat until it's reduced and crispy.

Remove to a plate.

Crack the other egg onto the cooked rice and mix to coat each grain.

Put the oil in a frying pan and heat until it smokes before adding Step 4.

Add the chicken stock granules, wine, mirin and salt & pepper and fry. Stir to keep the rice grains separate. Add the frozen green peas.

Keep stir frying so the rice grains stay separated. Add the scrambled egg from Step 1, then the minced pork from Step 3.

Mix well and transfer to a serving dish.

Tips & Note

Flavour the minced pork well with lots of sweet and savoury, as the plain green peas will absorb this flavour when added later.
