Nice and Crispy Minced Pork & Turnip Croquettes

You don't need to boil the turnips before frying, this is so easy to make!

Ingredients

Turnip (medium) 1
Spring onions 2
Deep fried tofu (abura-age) 1
Minced pork 200g
Egg yolk 1
Salt & pepper as required
Batter:
Flour as required
Egg 1
Breadcrumbs as required
Oil for frying as required
Tonkatsu sauce as required
Ponzu vinegar as required

Method

These are turnips.

Cut the turnips into 8mm dice, finely chop the spring onions, and dice the deep fried tofu. Put all in a large bowl.

Add the minced pork, egg yolk, salt & pepper and mix well.

Make your preferred shapes with the mixture. Dredge with flour, run through the beaten egg and coat with the breadcrumbs.

Heat the oil for frying in a pan to 170C. Add Step 3 and deep fry.

Remove and drain any excess oil on kitchen paper. Transfer to a serving dish with the sauce and vinegar alongside.

Tips & Note

Once coated in breadcrumbs, put the croquettes on a plate, wrap in cling film and put in the fridge for a while - this will help to keep their shape
