Tarako fried rice with tinned cod roe - authentically crispy!

Tinned cod roe is not used that much in the UK but here I'll show you how to make a delicious rice dish. You can also use it in a pasta sauce.

Ingredients

Pressed cod roe tin 1/2
Egg 1
Spring onion 1
Salt & pepper 2 pinches each
Fish sauce (or soy sauce) 1 tbsp
Vegetable oil 1 tbsp
Cooked rice for one
Chilli oil optional

Method

Here's everything you need.

Transfer half of the cod into a bowl and mash.

Add the egg to some cooked rice and mix well. Finely chop the spring onion.

Add oil into a pan and turn the heat on to medium. Add the egg/rice and spread out. Do not touch for a minute, then stir fry. Add the white parts of the spring onion. Stir fry for 3 minutes.

Add the mashed cod roe, salt & pepper, fish sauce and green parts of the spring onion, then stir fry for 1 minute. Job done.

Pour on some chilli oil if you like a spicy finiish!

Tips & Note

It's very difficult to cook fried rice with a crispy finish but coating each grain with the egg is the easiest method to do so. Try it!
