Shortbread with Black Sesame Seeds

A delicious wholewheat shortbread perfectly enhanced by the sesame seeds.

Ingredients

Unsalted butter 80g
Salt 1g
Light brown sugar 30g
Plain flour 100g
Wholewheat flour 50g
Black sesame seeds 10g

Method

Put the softened butter in a bowl at room temperature and mix well with a whisk until it becomes white.

Add the dry ingredients (no need to sift) and black sesame seeds in one go and mix well with a whisk.

Gather and knead the dough firmly.

Put the dough into a plastic bag and flatten with a rolling pin to a 1cm thick rectangle. Allow to rest in the fridge for 30 minutes.

Cut the dough into 7cm long pieces and make an attractive design of holes using the blunt end of a bamboo skewer.

Put a baking sheet on an oven tray and lay the slices on top. Bake in an oven 160℃ for 20-25 minutes.

Wait for it to cool down before removing from the oven. Sprinkle with some extra sugar if you like, before serving.
