Traditional Plain Scones

A heavenly light texture...and so homely and comforting!

Makes 8-10 Cook: 60 min

Ingredients

Pain flour 200g
Baking powder 8g
Unsalted butter 65g
Salt 1g (a pinch)
Caster sugar 20g
Vanilla extract few drops
Egg 40g
Milk 45ml

Method

Sift the flour and baking powder together into a bowl.

Add the salt and sugar.

Add the chilled butter and crumble it in, mixing with the dry ingredients. Continue crumbling until it becomes nice and smooth.

Mix together the milk and beaten egg. Make a well in the centre of the bowl and add the milk and egg mixture and the vanilla extract.

Combine everything with a scraper to avoid kneading it.

Simply cut the mixture in two, press and repeat several times. You will soon end up with a smooth dough.

Wrap the dough in cling film and flatten with a rolling pin to a thickness of 2cm. Let this dough rest for 30 minutes in the refrigerator.

Use a cutter to make scones. Collect up the leftover dough, make into rounds, and cut out more scones.

Brush the scones with some beaten egg yolk and bake in an oven 180 ℃ for 15 to 20 minutes.

Remove from the oven and cool on a rack.

Serve warm with jam and clotted cream for true traditional scones!

Tips & Note

● Avoid kneading the dough in Steps ③, ⑤ and ⑥ to make a light scone. It's also worth using a dough scraper. You want to avoid forming gluten, as this will make it heavy.
● At Step ④, don't use all of the milk and egg mixture at once, leave about 10ml and use it where required to incorporate all the dry ingredients.
