Chicken and Courgette Risotto in Cheese Sauce

You can easily make a tasty risotto using Coleman's cheddar cheese sauce. It has the right amount of liquid for the rice to absorb.

Ingredients

Chicken breast fillet 100g
Courgette 1/2
Short grain rice for 1
Coleman's Cheddar Cheese Sauce 40g 1/2 pack
Butter 1 tsp
Water 200ml
Milk 200ml
Salt & pepper as you like

Method

Cut the chicken into bitesize pieces and the courgette into 1cm cubes. Fry together on high heat in a buttered frying pan.

When the chicken starts to change colour, add the unwashed rice and let it fry in the meat juices.

Add the water, milk and Cheddar Cheese Sauce and cook on high heat. When it starts bubbling, turn the heat down to low and put the lid on. Cook for 10 minutes, stirring occasionally.

If you want to make the rice a bit softer, turn the heat off then steam it for 2-3 minutes. Season with salt & pepper as necessary.

Tips & Note

You could add various ingredients such as mushrooms, onions, tuna, bacon and so on, as you like.
