Seriously Good!! Meatball Spaghetti with Branston Pickle Sauce

Not only can you use the traditionally British Branston pickle as a pasta sauce, it also tastes seriously good.

Ingredients

Spaghetti 200g
Pork stock cube 1
Branston pickle (small chunks) 3 tbsp
Olive oil 2 tbsp
Garlic 1 clove
Shallot 1
Pork sausage 3
Sliced cheese (Cheddar) 2
Parsley as you like
Branston pickle (for garnish) 2 tsp

Method

Use your favorite sausages. They're already seasoned, so you can use them as they are, just remove the skin. Divide into five equal pieces and roll them into meatballs.

Instead of salt, add the pork stock cube into a pan of boiling water and boil the pasta.

Put the olive oil in a large frying pan and add the smashed garlic. Fry on medium heat.

When the garlic becomes brown, remove it. Add the chopped shallots and sausages into the frying pan and fry on medium heat.

Add 3 ladles of pasta water (or 'pork soup') into the pan just as the shallots brown.

When the sauce reduces to the half, add 3 tbsp of Branston pickle and stir in.

1 minute before the pasta is cooked, add the sliced cheese into the sauce and allow to melt in. Now you're just waiting for the pasta.

When the pasta is ready, add it into the sauce and mix well for 1 minute. Transfer to a serving dish and garnish with extra Branston pickle on top and sprinkle with the finely chopped parsley.

Tips & Note

By boiling pasta with a pork stock cube instead of salt, the pasta becomes full of this flavour, quite delicious!
Everyone knows Branston pickle and cheese go really well together. In this recipe, the cheese melts and it tastes even better.
I think only a few people would spot that the sauce is made from pickle because its sourness becomes quite mild during cooking. Branston pickle is a nostalgic taste that the British love.
