Miso Soup with Pumpkin and Mooli

Ingredients

Pumpkin 100g
Mooli (daikon) 100g
Dried wakame seaweed 1 tbsp
Dashi stock granules 1/2 tsp
Hot water 600ml
Miso 35-40g

Method

Boil the hot water in a pan and add the dashi stock granules. Add the small diced mooli and cook for 2 minutes on high heat, then add the bitesize pieces of pumpkin.

Cook for 5 minutes, then turn the heat down to medium and dissolve in the miso. Finally, add the rehydrated wakame seaweed. Enjoy!
