Delicious Baby Spinach Korean Namul

Ingredients

Baby spinach 1 pack (240g)
Salt for boiling the spinach 1 tsp
Soy sauce 1 tbsp
Sesame oil 1 tbsp
Garlic (grated) 2/3 tbsp
Sugar 1 tbsp
Salt 1/2 tsp
Sesame seeds 1 tbsp
Spring onion 1

Method

Add the salt to some boiling water and cook the spinach for 1 minute then immediately plunge it into iced water or cool running water to prevent it cooking further.

Put all the seasonings from sesame oil to salt into a bowl and mix well. Finely chop the spring onion and crush the sesame seeds in your fingers to release flavour.

Squeeze the spinach tightly. Once you've squeezed out as much water as possible, it will only look like this small amount (see the photo). Add the spinach into the bowl and mix well by hand. Enjoy!
