Stir Fried Aubergine and Pork with Spicy Miso

Ingredients

Aubergine 1
Peppers (green and red) 1 each
Pork loin fillet 1
Sesame seeds 1 tbsp
Salt a pinch
●Miso 1 tbsp
●Sugar 1/2 tbsp
●GInger 1 thumb
●Soy sauce 1 tsp
●Chinese chilli bean sauce (toban-jan) 1 tsp
●Sake 2 tbsp
Vegetable oil as required

Method

Cut the aubergine into half lengthways then slice to 1cm widths. Remove the tops and white pith from the peppers and cut into bitesize pieces.

Put the aubergines and peppers into a bowl, drizzle with the sesame oil, sprinkle with some salt and rub in. Keep aside for 5 minutes.

Slice the pork thinly. Rub with the soy sauce and sugar and keep aside for 5 minutes. Put the oil in a frying pan and stir fry the pork until nicely browned.

Remove the pork to a plate. In the same frying pan, fry the aubergines for 5 minutes on high heat. Add the peppers and fry together. No oil is required.

When the aubergines and peppers have softened, add all the ●seasonings, then return the pork to the pan and mix well.

When most of the moisture is absorbed, it's ready.
