Crispy Bacon & Tomato Rice Balls (Onigiri)

It is so British to make bacon crisp. I tried it with tomato in a rice ball. It was a complete success!

Ingredients

Cooked rice for 1
Vegetable oil 1 tsp
Bacon rashers 4
Tomato (medium) 1/2
Spring onion 1
Pepper as required
Salt as required
Soy sauce 1 tsp
Mayonnaise 1.5 tbsp
Sesame oil 1 tsp
Nori sheet 1

Method

Put the oil in a frying pan and cook the bacon for 4 or 5 minutes until crisp. Warm the chopped tomatoes through on medium heat.

Pat any excess oil off the bacon fat and chop it. Finely chop the spring onion and add to the rice together with the tomato.

Add all the other ingredients and mix well. Add salt to your taste.

Wrap it in cling film and make a rice ball shape and cover with 1/3 of the nori sheet.

Tips & Note

Since the bacon itself is salty, be careful with the salt that you add later. It's delicious even if you add 1 tbsp parmesan cheese!
