Pork Fillets in Sweet Mustard Sauce

I used golden syrup instead of honey so it turned out sweet but fiery.

Ingredients

Pork fillets 350-400g
Salt as required
Pepper as required
Olive oil 2 tbsp
Dijon mustard 80g
Golden syrup 50ml
Soy sauce 50ml

Method

Season the pork with the salt and 2 tbsp coarsely ground black pepper. Rub in and keep aside for 5 minutes.

Put the olive oil in a frying pan and fry the pork for 5- minutes, turning occasionally. Remove to a plate and allow to cool then cut to 1.5cm slices.

In the meantime, make the sauce by mixing the mustard, syrup and soy sauce together in a bowl. Add more golden syrup or honey if you prefer it sweeter.

Return the pork to the frying pan, pour in half the sauce and fry for 4-5 minutes on both sides. Add the remaining sauce and bring to the boil before turning the heat off.

Transfer to a serving dish - it's ready!
