Bitesize English Breakfast Omelette Muffin

Ingredients

Eggs (medium) 2
Salt & pepper a pinch each
Tomato (medium) 1
Mushrooms 5-6
Bacon rashers 2
Mini sausages 3
Vegetable oil 1 tbsp
Butter as required

Method

1
Put the vegetable oil in a large frying pan. Fry the sausages and sliced tomato and mushrooms until cooked through and the bacon is very crispy.

Chop the cooked ingredients into bitesize pieces. Rub the butter into 3 or 4 hollows in the muffin tin and fill with the mixture evenly and equally.

Beat the eggs in a bowl and season with salt & pepper. Pour into the muffin tray evenly.

Put in a preheated oven 200C for 15 minutes. Allow to cool, it will shrink and will be easier to remove from the tin.

Serve with brown sauce or your favourite sauce.
