How to Make a Red Wine Sauce

An authentic red wine sauce for steak.

Ingredients

Balsamic vinegar 50ml
Red wine 200ml
Veal stock (fond de veau) 250ml
Sugar 1 heaped tsp
Salt a pinch
Butter 1 heaped tsp
Flour 1 heaped tsp
Steak juices as you like

Method

Put the balsamic vinegar in a pan and bring to the boil on high heat. Reduce by half.

Add the red wine and reduce further for 5-6 minutes on high heat.

Add the veal stock if you can find this. Alternatively, use one beef stock cube in 250ml hot water.

Mix the butter and flour to make a beurre manie.

Add the beurre manie, sugar and salt to the pan to thicken the sauce. Whisk well.

Add the steak juices into the sauce and mix well. The red wine sauce is ready.

Tips & Note

It's quite difficult to find veal stock, so use the alternative.
