Sauteed Salmon in Mayonnaise Mustard Sauce

Mayonnaise, lemon and mustard is a brilliant combination which works really well with this sauteed salmon.

Ingredients

Salmon fillets 2
Olive oil 1 tbsp
A  Mayonnaise 1 tbsp
A  Lemon juice 1 tbsp
A  Dijon mustard 2 tsp
A  Finely chopped parsley 1 tbsp

Method

Season the salmon with salt & pepper.

Put the olive oil in a frying pan and add the whole salmon skin side down. Turn it over then the meat becomes white.

Turn the heat down to medium and cook for about 4 minutes. Put onto a serving dish.

Pour the ingredients for A (thoroughly mixed) over the salmon and serve with any boiled vegetables (for example broccoli) and cherry tomatoes for colour.

Tips & Note

●Keep the inside of the salmon juicy - don't overcook and dry it out.
●You can use wholegrain mustard instead of Dijon if you don't have it.
