Anything Goes Paella

It's so tasty adding anything left in the fridge...particularly if you find some chorizo lurking at the back!

Ingredients

Chorizo 100g
Chipolata sausages 5-6
Onion 1
Carrot 1
Mushrooms 5-6
Tomato (medium) 1
Broccoli as you like
Olive oil 5 tbsp
Chicken stock 600-700ml
Paprika 1 tbsp
Turmeric 2 tsp
Salt & pepper as required
Rice 180g

Method

Slice all the vegetables thinly to cook easily. Chop the sausage and chorizo into slices. You can add a finely chopped clove of garlic if you like.

Put 3 tbsp olive oil in a large frying pan and fry the carrots, then the onions. Add the chorizo and chipolatas and fry.

Once the vegetables are half cooked, add 2 tbsp olive oil and the unwashed rice. Fry for 2-3 minutes.

Add the paprika, turmeric and chicken stock. Add the sliced mushrooms, broccoli and tomato and simmer on medium heat with out a lid.

Add more stock if required, simmering for 15-20 minutes. Adjust for seasoning with salt & pepper before serving.

Tips & Note

Paella is really handy to make because the rice cooks along with the vegetables and sausages. You can use anything you find in the fridge, so your paella will taste different every time!
