Ingredients

Red cabbage 1/2
Hard boiled eggs 2

Method

Cut the red cabbage into half then roughly chop.

Boil lots of water and add the cabbage. Boil for 5 minutes before draining the water into a bowl. Keep the water.

While it's hot, add the peeled hard boiled eggs into the water and keep for 2 hours.

Even after 1 hour, it begins to look rather blue!

Don't waste the boiled red cabbage, I made a salad with pine nuts and gherkins, see the recipe here.

Tips & Note

This is called a red cabbage, but it's definitely more purple than red - and purple is half blue! If eggs can turn out like this, I'll give it a go with some other things...By the way, the eggs are perfectly edible!
