Mushroom & Ricotta Tart

It's perfect for a home party. Use shop bought pastry, it's so easy.

Ingredients

Shortcrust pastry sheet 1
Olive oil as required
Mushrooms 1 pack (290g)
Ricotta cheese 250g
Eggs 2
Sour cream 150ml
Garlic 2 cloves
Salt & pepper as required

Method

Line a 23cm loose bottomed baking tin with the pastry and pierce with a fork. Rest in the fridge for 30 minutes.

Bake in a preheated oven 180C for 15 minutes. Allow to cool and flatten any raised areas.

Put the olive oil in a frying pan and add the thickly sliced mushrooms. Sprinkle with salt and fry on high heat.

Fry until the moisture is reduced. Drain and allow to cool.

Put the cheese, eggs, sour cream, grated garlic, salt & pepper and the mushrooms from Step 4 into a bowl and combine well.

Pour into the pastry dish and bake for 35 minutes at 180C.

Tips & Note

●Don't blind bake the pastry, this recipe shows you how to make a tart without weighing down the pastry.
●You must fry the mushrooms on high heat to release the moisture
