Avocado & Prawn Dumplings (Gyoza)

Already a great combination, this time, try avocado and prawns as gyoza dumplings.

Ingredients

Avocado 1
Prawns 80g
Coriander 20g
Lime juice a little
Salt a little
Red chilli as required
Gyoza dumpling wrappers 20
Vegetable oil 1 tbsp
Dipping sauce:
Lime juice 1/2
Sugar 1 tsp
Fish sauce (nam pla) 1 tbsp
Red chilli as required
Garlic 1 clove

Method

Cut the avocado in half and remove the stone. Chop the flesh into 1cm dice and drizzle with the lime juice to prevent discolouration.

Roughly chop the prawns and coriander and mix with the avocado in a bowl. Add a touch of salt and mix well. Add the deseeded and finely chopped red chilli.

Make the edges of the gyoza wrappers wet, then fill with some of the mixture from Step 2 and fold in half.

Seal the edges, making pleats as you go and press firmly. Flatten the bases.

Smash the garlic with the back of a knife and add to all the other dipping sauce ingredients in a bowl.

Put the oil in a frying pan on medium heat. Fry the dumplings. When the base has browned, add 100ml water, put the lid on and steam fry.

After 5 minutes, take the lid off and allow excess water to evaporate. Transfer to a serving dish and serve alongside the dipping sauce.

Tips & Note

●Cut the avocado into small dice - it's easier to fill the wrappers and is still chunky enough to be a satisfying bite
●You can mix equal parts soy sauce and vinegar for a simpler sauce
