Oven Baked Pork Fillet Cutlets (Katsu)

Ingredients

Pork fillets 250g
Salt & pepper as required
Flour as required
Egg 1
Breadcrumbs 6-8 tbsp
Spray oil as required
Mozzarella cheese 1
Cherry tomatoes 2

Method

Slice the pork fillets into 1.5cm thick slices and season with salt & pepper. Cover with cling film and tenderise to double the size.

Dredge with the flour and run through the beaten egg. Coat liberally with the breadcrumbs. Put a baking sheet on an oven tray and spray it with the oil.

Place the pork fillets on top and spray with the oil 5-6 times each. Put in a preheated oven 200C.

Bake for 15 minutes. Remove from the oven and stop with the grated mozzarella cheese and chopped cherry tomatoes then return to the oven.

Bake for a further 7 minutes until the cheese melts.

Tips & Note

●You can leave out the cheese and tomatoes at Step 5 and simply enjoy the cutlets with tonkatsu sauce or Worcester sauce
