Sicilian Pork

A lovely home cooked dish from Sicily, Italy.

Ingredients

Pork loin fillets 300g
Potatoes 250g
Salt & pepper as required
Butter 20g
Olive oil 2 tbsp
Onion 1/4
Garlic 1 clove
Anchovy fillets 4-5
Capers 2 tbsp
White wine 150ml
Green olives 10
Tinned tomatoes (chopped) 1
Mozzarella cheese 1
Parsley as required

Method

Cut the potatoes into wedges and fry on low heat in some of the olive oil in a frying pan.

Season the pork on both sides with the salt & pepper and keep aside for 5 minutes.

Fry the pork for 5 minutes, fat side down using tongs to hold it up. This fat will met down into the potatoes.

Lay the pork flat in the pan and fry for 3 minutes on each side then remove to a plate, keeping the potatoes in the pan.

Add the remaining olive oil, finely chopped garlic, onions, anchovy and capers into the pan.

Add the white wine and olives and cook for 1 minute. Add the tinned tomatoes and cook to reduce on medium heat for 3-5 minutes.

Return the pork from Step 4 and cook with the sauce for 5 minutes. Add the mozzarella cheese, put the lid on and cook for 5 minutes.

When the cheese has melted slightly, transfer to a serving dish and garnish with the finely chopped parsley.

Tips & Note

●You can add some chicken stock for extra flavour if you like,but it's really delicious as it is
