Crunchy Celery Fried Rice

The key is to add half the celery right at the end to retain the crunch.

Ingredients

Cooked rice for 2 people
Eggs 2
Celery 2
Carrot 1
Pork chipolatas 6
Green peas (frozen) 3-4 tbsp
Vegetable oil as required
Salt & pepper as required
Chicken stock powder 1.5 tbsp
Soy sauce 1 tbsp
Sesame oil 1 tsp

Method

Here are the ingredients. Use your favourite sausage or minced pork if there is no chipolata.

Finely chop 3/4 celery and finely slice the remaining quarter. Finely chop the carrot and the chipolata to your preferred size.

The simplest way to make separate fried rice is to crack a raw egg onto the cooked rice and mix it thoroughly to coat each grain.

Put a pinch of salt into the other egg, beat it and make a scrambled egg.

Remove and keep aside. Put the vegetable oil in the same frying pan and stir fry the carrots and celery.

After 3 minutes, add the rice, sausages, scrambled egg and green peas and adjust to taste with the seasoning ingredients.

Turn the heat off and add the sliced celery. Stir into the mixture.

Your fried rice with crunchy celery is ready.

Tips & Note

●Add the chicken stock powder as it is (not dissolved) as this will help keep the rice grains separate.
