Ingredients

Chocolate (70% cocoa) 200g
Butter (unsalted) 100g
Eggs (medium) 3
Caster sugar 180g
Scotch Whisky 1 tbsp
Plain flour 100g

Method

1
Preheat the oven 180C.
2
Break the chocolate into pieces and place in a bowl.
3
Into another bowl, pour boiling water and place the bowl with chocolate on top.
4
As the chocolate starts to melt, add the butter so they melt together (this will be quicker if the butter is chopped into small pieces first).
5
In another bowl, mix the eggs, sugar and whisky.
6
Very gradually, add the chocolate mix into the egg mix and whisk gently. Add the sifted flour and mix thoroughly.
7
Pour this batter into a baking tin and put in the oven for 17-18 minutes. After it cools, slice into 5cm squares ready to eat.
8
You could put icing sugar or cocoa powder on the top.

Tips & Note

The recipe is so simple, so use the best quality ingredients. Melt the chocolate and butter slowly and add it to the egg mixture slowly, but make sure to add the flour in fast. You could also include nuts or dried fruit. Brownies are quite rich, so make the pieces just the right size for you to savour the flavour.

It can be difficult to make a perfect hard-boiled egg that has a creamy yolk and a tender white. Overcooking a hard-boiled egg, which is easy to do, results in a chalky and sometimes greenish yolk, a rubbery egg white and a slightly sulfuric taste. In this video I demonstrate how I use my sous vide to get the perfect hard-boiled egg.
