Ingredients

Nori sheet 1
Cooked rice 100g
Pickled beetroot 3 slices
Rollmop herring 1/2
Frozen spinach 30g
Yukari (cooked shiso herbs) 1-2 tsp
Noodle stock (mentsuyu) 1 tbsp

Method

This is the tub of rollmops from Tesco.

It's quite sour as it is so soak in salted water for 10 minutes.

I used this jar of sliced beetroot.

Add the noodle stock to the frozen spinach and microwave for 30 seconds.

Add the yukari to the rice and mix well.

Place some cling film on a chopping board and lay the nori sheet on top in a diamond shape. Spread half the rice in a flat round in the centre.

Add the spinach, rollmop and beetroot.

Cover with the remaining rice and spread out.

Fold the top and bottom corners of the nori sheet with the cling film and press to overlap at the top.

Fold in the left and right corners of the nori sheet.

Keep for 4-5 minutes to firm up as the nori softens. Press into a firm shape before cutting with a wet sharp knife (including the cling film).

Remove the cling film. You can cut into half straight or diagonally.

Tips & Note

●If you prefer the sour taste, don't soak the herring in water beforehand, use as it is
