Change the recipe for scotch egg to scotch potato!

Ingredients

New potatoes 10
Plain flour as required
Egg 1
Breadcrumbs as required
Vegetable oil for frying as required
【A】
Minced pork 300g
Salt 1/4 tsp
Pepper a little
Dried thyme 1 tsp
Egg 1
Softened panko breadcumbs 20g

Method

Boil the new potatoes until soft.

Put all the ingredients A into a bowl and mix together until thoroughly combined.

Divide into 10 and cover a potato with the mix.

Dredge each with flour, run through beaten egg and cover liberally with breadcrumbs.

Deep fry in vegetable oil 160-170C until golden brown.

Tips & Note

●If you can't find panko breadcrumbs, tear apart crustless bread and soak in milk.
