[Video] Garlic Fried Potato Wedges

Ingredients

Maris Piper potatoes 500g
Water 1 litre
Salt 1 tbsp
Flour 3 tbsp
Paprika 1 tsp
Allspice 1/2 tsp
Dried thyme 1/2 tsp
Garlic powder 1 tsp
Salt 1-1.5 tsp
Salt & pepper as required
Fizzy water 90ml
Vegetable oil for frying as required

Method

Wash the potatoes and cut into wedges with the skin on. Soak in water.

Change the water occasionally until it stays clear. Put the potato wedges into 1 litre of water, add salt and put on a high heat.

When boiled, turn down to a simmer for 5 minutes until the wedges are just cooked.

Drain in a colander to remove all water.

Put the flour, paprika, allspice, thyme, garlic powder, salt & pepper into a bowl. Pour in the fizzy water and mix well to make a batter.

Put the oil in a large pan on medium heat. Put in the battered wedges and fry.

When they're crispy, remove onto kitchen paper to drain excess oil, they're ready to serve.

Tips & Note

The key is to just boil the wedges in salted water. You can use 2 cloves of grated garlic if you don't have garlic powder.
