Roast Beef Roulettes with a Japanese Dipping Sauce

Far easier to cook than you might think!

Ingredients

Beef (roasting joint) 1-1.5kg
Vegetable oil as required
Garlic (smashed) 1-2 cloves
Onion 1
Watercress 1 pack
Soy sauce 4-5 tbsp
Mirin 1 tbsp
Balsamic vinegar as required
Butter 1 tbsp

Method

Rub lots of salt & pepper into the beef.

Heat the oil in a frying pan and add the garlic. Remove the garlic when you can smell the aroma and put in the beef joint to brown on all sides.

Transfer the joint to a roasting tin and put in a preheated oven 210C (Gas mark 7) for 20-30 minutes.

Turn the oven temperature down to 180C and roast for a further 20 minutes for rare, 30 minutes for medium and 40 minutes for well done.

Add the soy sauce and mirin to the frying pan at Step 2 with a touch of water and reduce on medium heat.

Cook until the sauce becomes syrupy. Turn off the heat and add the balsamic vinegar and butter. Season with salt & pepper.

Remove the beef from the oven and cover with foil to rest.

Thinly slice the beef and use to roll up with thinly sliced onions and watercress. Dip in the sauce.
