Roast Chicken With Apricot Sauce

Simple - just put in the oven.

Ingredients

Chicken thighs on the bone 4
Coriander as required
Sauce:
Apricot jam 3-4 tbsp
Lemon juice 2
Soy sauce 50ml

Method

Preheat the oven 190C.

Mix all the sauce ingredients.

Place the chicken thighs onto a cooking tray and pour over Step 2 evenly.

Put on the middle shelf in the oven and roast for 40 minutes. You can baste occasionally. Cover the chicken with foil if necessary to prevent it burning.

Put onto a serving dish and garnish with the chopped coriander.

Tips & Note

●The cooking time will vary depending on your oven.
●If you have time, rub the sauce into the chicken at Step 3.
