Pork & Tofu Simmered in Tomato Sauce (Mapo Tofu)

It's a mix of Chinese and Italian flavours and works better with rice rather than pasta.

Ingredients

MInced pork 200g
Chicken stock granules 1 tbsp
Tinned tomatoes (227g) 1
Sesame oil 1 tbsp
Sugar 1 tbsp
Soy sauce 2 tbsp
Miso (red) 2 tbsp
Chinese chilli bean sauce 1 tbsp
Tofu 1/2 pack
Green beans 10
Mushrooms 3
Carrot (medium) 1/2
Leek 1/2
Onion (medium) 1/2
Potato starch in a bit of water 1 tsp

Method

Finely chop the onion, leek, carrot and green beans. Roughly chop the mushrooms and stir fry all the vegetables in some oil in a frying pan.

When softened, add the minced pork. When it's cooked, add the tinned tomatoes and chicken stock granules.

Add the chilli bean sauce, soy sauce, miso and sesame oil.

When it's cooked, add the potato starch in water to thicken the sauce. Add the tofu pieces but don't mix. Reduce the sauce slightly, it's ready to serve.

Tips & Note

I made this while I was making a sauce for a spaghetti meat sauce and thought it would taste just as lovely with tofu.
