Nice and Spicy Kofta Curry

This has a runny gravy but you'll enjoy the spicy flavours. Use your favourite minced meat.

Ingredients

Garlic 2-3 cloves
Minced meat (beef, lamb, pork) 350-400g
Oil 2-3 tbsp
Onions 2
Egg 1
Ginger 4cm
Coriander leaves (finely chopped) 2-3 tbsp
Turmeric 2 tsp
Curry powder 4-5 tsp
Chilli powder 1-2 tsp
Cumin 1-2 tsp
Tinned tomatoes 2/3
Coconut milk or milk 300-400ml

Method

Blend the onion to make it very fine.

Finely chop the ginger and garlic.

Put the oil in a pan and fry the blended onions. Fry on low heat until golden then add the garlic and ginger.

Transfer half of Step 3 into a bowl and allow to cool. Add the minced meat, a beaten egg, coriander and half the curry powder and turmeric.

Add the remaining curry powder and turmeric, chilli powder and cumin to the onions in the pan.

Add the tomatoes to Step 5 and mix well.

Add the milk or coconut milk and season with salt & pepper. Mix well and bring to the boil.

Mix Step 4 well and divide into your favourite size meatballs. Fry in a frying pan until nicely browned.

Transfer the fried meatballs into Step 7 and simmer for 10-15 minutes.

It's now ready to serve. Adjust the thickness of the sauce with the milk or some water. Adjust to your taste before serving.

Tips & Note

Use your favourite meat - I used minced pork this time. You can add stock or cubes if you need more depth to your gravy.
