Ingredients

Ponzu vinegar:
Rice vinegar 100ml
Water 100ml
Soy sauce 100ml
Bonito flakes a pinch
Lemon wedge 1
Sambai-zu:
Vinegar 100ml
Soy sauce 100ml
Mirin or sugar 100g
Chilli powder (optional) 1/2 tsp

Method

For the ponzu vinegar: put the rice vinegar, water and soy sauce in a pan on high heat. Once it boils, turn off the heat.

Add the bonito flakes and lemon wedge to the pan and keep aside.

Put all the sambai-zu ingredients into a bowl and mix well until the sugar dissolves.

Pour the ponzu vinegar from Step 2 into the bowl at Step 3 through a sieve. Squeeze in the lemon.

You can add the chilli powder if you like.

Tips & Note

●You can keep this in the fridge for one month. It's a great sauce for making pickles.
