Curry Flavoured Sweet & Sour Sprats

Ingredients

Sprats 300g
Rice flour as required
Salt & pepper as required
Vegetable oil for frying as required
Carrot 1
Celery 1
Seasonings:
Soy sauce 1 tbsp
Vinegar 100ml
Light brown sugar 3 tbsp
Curry powder 2 tsp

Method

Cut the heads and tails off the sprats and clean out the insides before washing and patting dry.

Make thin strips from the carrot and finely slice the celery diagonally.

Mix all the ingredients for the seasonings in a bowl. Add the vegetables from Step 2 and mix.

Dredge the sprats with the flour, salt & pepper and deep fry until crispy. Immediately put into the sauce at Step 3 and allow to soak.

Tips & Note

●If you can, marinate the dish overnight or for one hour for the sprats to absorb the liquid.
●You can use radish or mild onions instead of celery.
●This tastes good even without the curry powder.
