Yaki Soba With Sticky Sauce

I made this when I wanted to use up bits and pieces of vegetables and meat in my fridge. You could also put this onto rice instead of noodles.

Ingredients

Soft noodles for two 100g
Sesame oil 1 tsp
Meat or fish, whichever you like as required
Leftover vegetables as required
Water 100ml
Soy sauce, sake, mirin 1 tsp each
Oyster sauce, chicken stock 1 tsp each
Chopped or grated ginger 1/2 tsp
Potato starch (corn starch) 1 tbsp

Method

Cook the noodles for 2 minutes in boiling water and drain. Put the noodles into a frying pan with hot oil. Create a round shape.

Start the sticky sauce in a pan. First, stir fry the vegetables and meat together with the ginger.

Put the water and seasonings/flavourings and starch in a bowl and stir, before adding to the cooked vegetables and meat and stirring together to make a sticky sauce.

As the sauce gets sticky, pour this sauce onto the noodles, it's now ready to eat.

Tips & Note

If you boil the noodles too much, they will be too soft, so remove after 2 minutes. At 3, the starch goes to the bottom of the bowl so stir well to incorporate it. If you like, you can add your favourite flavours with this dish, such as mustard, Worcester sauce or vinegar.
