Spaghetti With Spicy Cod Roe Sauce

Everyone loves this dish, but spicy cod roe is not available here, so we can use the tinned one with chilli pepper.

Ingredients

Princes Cod Roe 100g
Cayenne pepper 1 tsp
Kombu broth 2 tbsp
Hot chilli oil 1 tsp
Olive oil as required
Leek 15cm piece
Sundried chilli (deseeded) 1
Pasta 200g
Salt for the pasta 1-1.5% of water

Method

This is the Princes tinned cod roe, only £1.30 for 200g. I used half, it's enough for two.

Make it hot with the cayenne pepper and hot chilli oil and crush together. Add the kombu broth, the sauce is now ready.

Start cooking the pasta.

Put 3-5 tbsp olive oil in a frying pan and add the leek cut into diagonal pieces.

Add the sundried deseeded chilli and fry on medium heat.

When the leek has softened, add 2-3 ladles of pasta water and shake the pan to mix the water and oil to emulsify.

Add 2/3 of the sauce from Step 2 and wait until the pasta is cooked.

Now add the pasta and mix thoroughly with the sauce. Put onto a dish and pour over the remaining 1/3 of the sauce.

Tips & Note

●Cayenne pepper and hot chilli oil is just an example of making it spicy but you can use whatever you like for this.
