Fried Soba Noodles (Yakisoba) With Mushrooms

Soba noodles have far less carbohydrates so people on a diet always eat this healthy noodle.

Ingredients

Soba buckwheat noodles 2 bunches
Mixed mushrooms 150g
Bacon 2 slices
Olive oil 1 tbsp
Garlic, sliced 1 clove
Soy sauce as required
Sea salt as required
Black pepper as required
Chilli powder as required
Nori seaweed as required

Method

This is the soba buckwheat noodles, available in large supermarkets or organic food stores.

Remove the mushroom stalks and chop the rest into bitesize pieces. Slice the bacon into thin strips. Crush the nori seaweed into small pieces by hand.

Boil the noodles until they are al dente, 1 minute earlier than on the packet instructions. Cool the noodles immediately in cold water then drain.

Put olive oil in a frying pan and heat gently. Add the garlic and bacon and cook well.

Turn up the heat to medium and add the mushrooms.

Add the noodles (step 3) into the frying pan and let the noodles absorb the sauce from the mushrooms. Cook on a high heat.

Add seasoning to taste and serve on a dish, sprinkle with the crushed nori seaweed and the chilli powder.

Tips & Note

Choose streaky bacon with more fat for this recipe.
