Ingredients

Egg 1
Vegetable oil 1 tsp
Water 1 tsp

Method

Put the oil in a frying pan (off the heat).

Break the egg into a small bowl. Scoop out the yolk with a spoon and place on top of the oil.

Turn on the heat to medium and start frying the egg.The yolk will cook gradually, allowing any moisture to escape.

Fry the yolk for 1-2 minutes according to your preference, then pour over the white (ideally, you should whisk this slightly first).

Add the water to steam fry and put the lid on.

1 minute later, the white will be solid, so you can take it off when you feel it's ready. You'll get a lovely concentrated fried egg this way.

Tips & Note

●Be careful to place the egg yolk on the oil gently, otherwise you will lose the creaminess if you just drop it on.
●As eggs age, the yolk contains more water, so it's best to let the yolk cook first and allow the moisture to evaporate before adding the white.
