Omelette Waffle Japanese Style

It's a firm favourite with kids in Japan. Simply use a waffle maker and have fun.

Ingredients

Eggs 2
Dashi granules 10g
Salt a pinch
Sugar 20g
Spring onions 3
Melted butter 30g
Flour 50g
Strong flour 50g
Water 100-120ml

Method

Crack the eggs in a bowl and add the salt, sugar, finely chopped spring onions, dashi granules and 50ml water. Mix thoroughly to combine well.

Season to taste.

Add both flours to Step 2 and mix well. Add more water a bit at a time to make a batter.

Scoop up some batter with a spoon - if it drops from the spoon in ribbons, this is the right consistency.

Heat up the waffle maker and pour in lots of batter. Put the lid on.

Cook for 6 minutes in total on both sides on medium heat. You can check occasionally for colour.

When both sides are nicely browned, it's ready. Enjoy as it is or with your favourite sauce.
