Chicken Fried Rice with Artichokes

I never know what to do with artichokes, so I challenged myself using a jar of artichokes in oil.

Ingredients

Artichokes in oil 1 jar
Cooked rice for 2 people
Chicken breast 1
Salt & pepper a little
Flour as required
Egg 1
Carrot 1/2
Frozen green peas 2 handfuls
【Seasoning】
Chicken stock powder 2 tbsp
Light soy sauce 2 tbsp
Mirin 1 tbsp
White wine 2 tbsp
Sesame oil 1 tsp
Vegetable oil as required

Method

To make nice crispy fried rice, crack the egg into the cooked rice and mix well to coat each grain.

Season the chicken with salt & pepper and leave for 10 minutes. Cut into bitesize pieces and dredge with flour.

Put the vegetable oil in a frying pan and fry the chicken pieces for 3 minutes. Remove onto a plate.

In the same frying pan, add the finely chopped carrots for 30 seconds, then add the rice from Step 1 and stir fry.

To start with, the rice will be a bit sticky bit will become crispier as each grain fries. Add the cooked chicken pieces, green peas, artichokes and seasoning ingredients.

Stir fry on high heat, and agitate as in a wok. It's ready when you like the look of it!

Tips & Note

●You can use your own fried rice recipe, adding in the artichoke as above.
●If you can, pat dry the oil from the artichokes, otherwise the dish might end up too greasy.
