Nice and Golden Turnip, Ham & Shrimp Dim Sum

Ingredients

Turnips 2 (350g)
Ham 50g
Dried shrimps 1 tbsp
Spring onion 1
Warm water 200ml
Sesame oil 1-2 tsp
A
Rice flour 130g
Potato flour 2 tbsp
Sugar 1 tsp
Salt 1/4 tsp
Pepper as required
Dipping Sauce:
Vinegar 3 tbsp
Light soy sauce 2 tbsp
Sugar 1 tbsp
Sesame oil 1 tbsp

Method

Peel the turnips and grate.

Finely chop the ham and rehydrate the dried shrimps then chop. Cut the spring onions into small pieces. Put in a bowl.

Add ingredients A into Step 2 and mix well.

Add the warm water into Step 3 a bit at a time and mix well. Use the water for rehydrating the shrimps within the 200ml.

Heat a frying pan on medium and add the sesame oil. Pour in half of Step and spread out. Turn down the heat to low, put the lid on and steam fry for a few minutes.

When it's nicely browned, turn over and fry the other side until brown. Mix the dipping sauce ingredients together in a small bowl and serve alongside.

This is the rice flour I used, available in Asian foodstores in London.

Tips & Note

●Grate the turnip coarsely to retain as much moisture as possible
●Be careful not to burn it as you fry it, keep on a low heat and check often
