Minced Pork & Bamboo Shoot Rice

So tasty with lots of ginger.

Ingredients

Rice 2 gou (300g)
Tinned bamboo shoots in water 200g
Minced pork 200g
Ginger 80g
Oyster sauce 2 tbsp
Sake 1 tbsp
Light soy sauce 1 tsp
Mirin 1 tbsp
Salt & pepper as required
Vegetable oil as required
Coriander leaves if you like

Method

Cook the rice using a bit less water than usual. Roughly chop the bamboo shoots and finely chop the ginger.

Put some oil in a frying pan and heat on medium. Fry the ginger then add the minced pork and fry until browned.

Add the bamboo shoots.

Add the oyster sauce, sake, mirin and simmer until the sauce is reduced. Season with salt & pepper.

Add the cooked rice and mix well.

Transfer to a serving bowl and garnish with coriander leaves before serving.

Tips & Note

●The pork mixture will be quite strong flavoured but once mixed with the plain rice, it will be just right
●If you think the ginger might be just a bit too much, rest assured, that is the right amount!
