Prawns Simmered In Coconut

Hint of a Thai curry.

Ingredients

Prawns with shell on 6
Onion 1/2
Red and Yellow Pepper 1/3 each
Green beans 10
Garlic 1 clove
Ginger same as above
Lemongrass 2
Sauce:
Japanese soy sauce 1.5 tsp
Mirin 1 tbsp
Sake 1 tbsp
Chilli sauce 1 tsp
Curry powder 1 tbsp
Lime juice 1/2
Coconut milk 2/3 tin

Method

Wash the prawns thorough, removing the black thread down the spine. Boil the green beans. Bash the lemongrass to release the flavour. Cut the pepper and onion into fine thin strips.

Put some oil in a frying pan. Add the grated garlic and ginger. Add the prawns and fry until they turn red. Add salt & pepper.

Remove 2 onto a plate. Use the same frying pan and fry the onions, peppers and lemongrass.

Add the sauce ingredients into this pan and boil. Return the prawns and green beans to the frying pan and stir for 5 minutes.

Remove the lemongrass and season to taste. That's it!
